An egg powder business is a food factory that breaks shell eggs, pasteurises the liquid egg and dries it into a powder that bakeries, noodle and sauce makers and exporters buy by the tonne. It does not start in a small shed. Two project reports from Niir Project Consultancy Services (NPCS) put such a plant at about ₹9.3 crore to ₹10.4 crore, because buyers accept powder only from a plant with a spray dryer, a pasteuriser and food-safety records behind it.
Three early decisions shape the rest. Choose one product: whole egg, yolk or white. Find your first buyers before you size the plant. And place the factory inside a large layer-farming belt, because eggs are bought daily and travel badly.
What does an egg powder business cost, and what decides the profit?
Two NPCS project reports on egg powder put total project cost between ₹930 lakh and ₹1,044 lakh, with plant and machinery taking 53 and 64 per cent of it.
| Item | NPCS report A | NPCS report B |
|---|---|---|
| Capacity as stated | 2,400 kg per day | 4.2 MT per day |
| Plant and machinery | ₹489 lakh | ₹672 lakh |
| Cost of project | ₹930 lakh | ₹1,044 lakh |
| Return as stated | 29% | 26% |
| Break-even as stated | 52% | 49% |
Treat these as two examples, not a price list: the reports differ in capacity and equipment, report B does not say whether its capacity counts powder or liquid egg, and both note that figures can change.
Egg price runs straight into every kilogram you sell. USDA data put whole egg at 76.2 per cent water, so a kilogram of powder needs about 4 kg of liquid egg, roughly 90 medium eggs of 44 g edible content. Each ₹1 on an egg therefore adds about ₹90 to a kilogram of powder before drying, packing and labour. Some vendor pages quote 8 to 9 kg of liquid egg per kilogram; the USDA composition does not support that.
Whole egg, yolk or white: which egg powder should you make first?
Make whole egg powder first unless you already have a buyer for the other half of an egg. Separating yolk from white turns one product into two, and the half you cannot sell becomes a cost.
| Powder | Goes into the dryer | Typical buyers | The catch |
|---|---|---|---|
| Whole egg | Whole liquid egg | Bakeries, pasta, noodle and sauce makers, institutional kitchens | Carries the egg's fat (about 9.5 g per 100 g, per USDA), so trial your recipe on the dryer maker's unit first |
| Yolk | Separated yolks | Mayonnaise and sauce makers, bakeries | Needs a buyer for the leftover whites |
| White (albumen) | Separated whites | Bakeries, protein product makers | Needs a buyer for the leftover yolks |
How is egg powder made, step by step?
The order is the same in every plant; what buyers trust is how tightly each step is recorded.
- Receive and grade the eggs. Reject cracked and dirty ones and note each lot's farm.
- Wash and sanitise the shells.
- Break the eggs by machine, separate yolk and white if you are making either, and strain out shell pieces. Spent shells have their own market, covered in eggshell powder manufacturing.
- Pasteurise the liquid egg, then chill it. The NPCS egg powder report has pasteurised egg piped to the spray dryer, in that order; keep the time and temperature records in your food-safety file.
- Spray dry the liquid: a fine mist enters a hot chamber, the water evaporates and dry powder falls out.
- Cool, sift and test the powder. Export inspection rules call for testing every batch for Enterobacteriaceae, a group of bacteria used as a hygiene indicator.
- Pack in moisture-proof bags with a batch code, so a complaint traces to one day's eggs.
Which machines does an egg powder manufacturing plant need?
The pasteuriser and spray dryer are the two purchases to get right. A spray dryer is the same family of machine used in milk powder manufacturing, so dryer makers serving dairies are a natural place to start quotes.
| Machine | What it does | Ask the supplier |
|---|---|---|
| Egg washer and candling table | Cleans shells, shows up cracks | Eggs handled per hour |
| Breaker and separator | Cracks shells, splits yolk from white | How much shell reaches the liquid |
| Filter and chilled holding tanks | Remove shell pieces, hold liquid egg cold | Cleaning method between lots |
| Pasteuriser and cooler | Heat-treats the liquid, then chills it | Whether temperature and time are logged automatically |
| Spray dryer | Turns liquid egg into powder | Water evaporated per hour; a trial run on your egg |
| Sifter and packing machine | Evens the powder, seals packs | Pack sizes buyers want |
| Laboratory kit and effluent treatment | Batch tests, wash water treatment | Which tests the kit covers |
The NPCS reports split equipment into indigenous and imported machinery, laboratory kit, pipe fittings and erection; compare quotes the same way.
Where should the plant stand, and who will buy the powder?
Stand it inside a large egg-producing belt. India produced 149.11 billion eggs in 2024-25, and Andhra Pradesh, Tamil Nadu, Telangana, West Bengal and Karnataka gave nearly 64 per cent, according to Department of Animal Husbandry and Dairying survey data as reported by Factly. Sign supply terms with layer farms first, because an export application lists the farms you buy from (see the poultry farming guide).
Buyers are bakeries, noodle, pasta and sauce makers, and exporters. In June 2026, OVO Farm of Balangir, Odisha, shipped 22.6 tonnes of dried whole egg powder to Austria from a plant set up in 2025 that holds FSSC 22000, Halal and Kosher certificates, as Indiagri reported.
Which licences does an egg powder business need?
Confirm each item with your state food safety office and, for exports, your Export Inspection Agency; the band you fall in depends on turnover and on whether you ship abroad.
| Approval | Issued by | What to know |
|---|---|---|
| Food business registration or licence | Food Safety and Standards Authority of India (FSSAI), through state offices | From 1 April 2026: registration up to ₹1.5 crore turnover, state licence above that up to ₹50 crore, central licence above ₹50 crore |
| Export approval | Export Inspection Council (EIC) | Needed to export. EIC's instructions ask for a food-safety (HACCP) manual, layout plans, water test reports, pollution board consent and a layer farm list; the online copy is dated March 2007, so ask for the current version |
| Pollution control consent | State Pollution Control Board | Wash water and effluent |
| Product specification | Bureau of Indian Standards | IS 4723:1978 covers egg powder; ask buyers which specification they test against |
| Factory, fire, GST, trade licences | State and local authorities | Rules vary by state |
How do you start an egg powder business without over-buying the dryer?
Spend in this order, so each step lowers the risk of the next.
- Pick the product and collect two or three buyers' written specifications.
- Sign egg supply terms with layer farms, with a price formula that follows the egg market.
- Ask two or three dryer makers for a trial run on your own egg and compare quotes using the machinery split above.
- Start the food-safety manual and licence applications while civil work runs, not after commissioning.
- Check subsidy options in our government schemes pages and set the idea beside other manufacturing guides.
NPCS has prepared project reports since 1994, more than 5,000 across over 40 sectors. An NPCS egg powder report covers the market survey, process flow, machinery with suppliers, raw material costs, layout, manpower and five to ten years of financials, in the format lenders usually ask for (what a detailed project report contains). It supports planning and does not guarantee a loan.
Frequently asked questions
Is egg powder cheaper than fresh eggs?
No, kilogram for kilogram. A kilogram of powder holds the solids of about 90 medium eggs, so its price must cover those eggs plus drying, packing and margin. Buyers pay for the saving: no cold chain and longer storage. Compare a quote with the cost of about 90 eggs, not a kilogram of fresh eggs.
How many eggs make 1 kg of egg powder?
About 90 medium eggs. USDA data show whole egg is 76.2 per cent water, so a kilogram of powder needs about 4 kg of liquid egg, and a medium egg gives 44 g of edible egg. Larger eggs mean fewer are needed.
Can I start an egg powder business with a small investment?
A very small unit is hard. The two NPCS reports run to ₹9.3 crore and ₹10.4 crore, and the pasteuriser, spray dryer, laboratory and records are needed at any scale. Test the idea cheaply first: sign buyers and egg supply and get a dryer trial run before committing to the plant.
Is egg powder the same as eggshell powder?
No. Egg powder is dried egg contents, sold as a food ingredient. Eggshell powder is ground shell, sold as a calcium-rich powder to farms, feed makers and households, and is a separate business with its own machines and buyers.
