A lemon and lime products manufacturing business starts with one choice: which of three routes you run first. Juice and concentrate sell to bakeries, beverage makers and food service. Dried lime and lemon powder keep for months and sell to spice, snack and cosmetic makers. Peel oil and pectin turn the peel into higher value ingredients. Each needs different machines, cash and buyers.

For a first plant, pick one route, buy fruit when it is cheap, and add a second route only after the first has repeat buyers. Project reports from Niir Project Consultancy Services (NPCS) show how fast the bill grows: ₹3.14 crore for a unit making juice powder, peel oil and pectin, and ₹19.83 crore for a large powder and oil plant. You also need a food licence, an Udyam registration and fruit within a few hours of your gate.

Which product route suits a first lemon plant?

Choose by who will buy from you first, not by which machine looks cheapest.

RouteWho buysWhat decides the margin
Juice and concentrateBakeries, beverage makers, food serviceJuice recovered per kg of fruit, and spoilage control
Dried lime and powderSpice, snack and cosmetic makersDrying cost per kg of fruit, and moisture control in packing
Peel oil and pectinFlavour, fragrance and food ingredient buyersSteady peel volume, which exists only once juice or powder runs

If you cannot yet name a juice buyer, start with dried lime or powder: it stores, so a late sale does not spoil stock. The peel route has guides on pectin manufacturing and essential oil extraction, and drying overlaps with the vegetable dehydration business.

How much does a lemon processing plant cost, and what does it return?

These are the project statistics NPCS lists for two lemon reports, "Start Lemon Processing Unit (Lemon Juice Dry Powder, Lemon Peel Oil Extraction Steam Base, and Lemon Pectin)" and "Dry Lemon Powder and Lemon Oil".

ItemJuice powder, oil and pectin unitLarge powder and oil plant
CapacityPowder 104 kg, oil 40 kg, pectin 140 kg a dayPowder 32 MT, oil 12 MT a day
Plant and machinery₹163 lakh₹721 lakh
Total project cost₹314 lakh₹1,983 lakh
Rate of return25%33%
Break even point54%51%

Machinery takes 52% of project cost in the smaller unit and 36% in the larger, so land, building and other costs grow faster than the machine list. A break even point near 50% means running at roughly half capacity to cover costs, and with fruit arriving in seasons that is a supply question as much as a sales one. Capacity, location and technology change every figure here.

How are lemons turned into juice, dried lime and peel oil?

All three routes share the first two steps.

  1. Grade the fruit at the gate. Reject split, mouldy and unripe lots; one bad lot spoils a juice batch.
  2. Wash and size it. A rotary washer removes dust, and size grading gives the extractor or drier uniform fruit.
  3. Take the peel oil off before juicing. Oil that reaches the juice makes it bitter, so juice lines use extractors that separate peel from juice.
  4. Extract, strain and pasteurise the juice, then fill it or concentrate it.
  5. Dry the fruit or the juice. For dried lime, the Central Food Technological Research Institute (CFTRI) describes soaking whole fruit and drying it in a hot air drier before sealed packing. For powder, dry the juice or peel, then mill and sieve.
  6. Send the peel on. Steam distillation takes the oil, and the NPCS multi product report adds pectin from the remainder.

Which machines does a lemon processing line need?

MachineWhat it doesRoute
Rotary washer, sorting tableCleans fruit, rejects damaged lots, grades by sizeAll
Citrus juice extractorSeparates juice from peel and pulp, with little oil carried overJuice
Strainer, pasteuriserRemoves pulp and seeds, heat treats juiceJuice
Hot air or tray drierDries whole fruit or peel; CFTRI's 105 kg a day dried lime model uses 192 traysDried lime, powder

CFTRI does not guarantee machine performance, so get a trial run on your own fruit before paying.

When is lemon fruit cheap, and how much do you need?

Indian trade uses lemon and lime loosely, so confirm the variety your buyer wants. ICAR's data for acid lime shows flushes in June and July (Mrig Bahar), September and October (Hast Bahar) and January and February (Ambia Bahar). It calls the Hast Bahar fruit, harvested in summer, the most remunerative for growers, which also tells you when you will pay most.

In April 2024 wholesale lemons reached ₹150 per kg against ₹30 to 40 earlier, FreshPlaza reported, citing Tribune India. Sign growers before the lean months, store cheap fruit as dried or concentrated product, and plan cold storage for fruit you cannot process within days.

To size the plant, use the CFTRI ratio for dried whole lime: 700 kg of fruit a day makes 105 kg of product, a 15% yield. Over 300 working days that is 210 tonnes of fruit a year, or about 6.7 kg of fruit for each kg sold.

Which licences does a lemon processing unit need?

The Food Safety and Standards Authority of India (FSSAI) sorts food businesses by annual turnover. Its order of 13 March 2026, in force from 1 April 2026, sets these limits.

Annual turnoverFSSAI category
Up to ₹1.5 croreRegistration
Above ₹1.5 crore, up to ₹50 croreState Licence
Above ₹50 croreCentral Licence

Estimate first year turnover, and check on FSSAI's FoSCoS portal whether your activity adds conditions beyond turnover.

  • Udyam registration: puts the unit on the MSME rolls that lenders and schemes use.
  • GST registration: needed to invoice buyers.
  • State pollution control board: fruit washing makes wastewater and peel makes solid waste, so ask which category applies and whether consent is needed before construction.

How do you finance a lemon plant, and does PMFME apply?

The Pradhan Mantri Formalisation of Micro Food Processing Enterprises (PMFME) scheme gives micro food units a credit linked subsidy. As of 24 August 2026, Outlook Business reported a cap of ₹10 lakh per unit and a temporary extension to 30 September 2026, with five more years proposed but not approved. Check the ministry's pages for today's terms; see our food processing schemes page for others. Larger plants mostly rely on term loans and their own capital.

A bank will want a project report covering project cost, working capital, profitability, break even point and cash flows. NPCS has prepared project reports since 1994 in the format banks and government schemes typically ask for.

What should you do in the first 90 days?

  1. Get a written enquiry or sample order from two buyers for your first route.
  2. Record mandi prices in a growing district across all three flushes.
  3. Collect washer, extractor or drier quotes at your planned capacity and book trial runs.
  4. File for Udyam and settle your FSSAI category from first year turnover.
  5. Compare other manufacturing business guides first.

An NPCS project report on lemon and lime products covers plant and machinery with suppliers, raw materials with sources, cost of production, profitability, break even point and a cash flow projection for your capacity, the document a lender asks to see.

Frequently asked questions about lemon and lime products

What is the price of 1 kg of lemon powder?

There is no single price, because grades differ widely. Spray dried juice powder, ground dried peel and powder made with a carrier sell at different rates, and all move with fruit cost. Take written quotes for your grade and pack from three buyers. As a cost anchor, CFTRI's dried lime model uses about 6.7 kg of fruit per kg of product.

How long does lemon powder last?

Sealed, dried whole lime in the CFTRI profile keeps for more than six months. Powder absorbs moisture and clumps, so moisture content and barrier packaging decide its life more than the process does. Set a moisture limit and print the best before date from your own shelf life tests.

How much does 1 kg of lemons cost?

Prices swing several times a year. In April 2024 wholesale lemons reached ₹150 per kg against ₹30 to 40 earlier, as heat tightened supply, FreshPlaza reported. Check the government's Agmarknet mandi rates for your district before fixing raw material cost.

Which small manufacturing business is most profitable in India?

No single business wins; profit depends on raw material access, buyers and plant utilisation. Compare ideas on investment, input supply, approvals and likely buyers before you compare margins. Our food processing business ideas page lists options by investment band, each linked to its guide.
