Citric acid is a tricarboxylic acid occurring naturally in various fruits and vegetables, most significantly in citrus fruits giving it a tart, bitter taste. C6H8O7 is the molecular representation of citric acid. It is a weak acid with a pH ranging between 3 and 6. A higher concentration of these acids is particularly found in lemons and limes, and contribute to about 8 percent of the dry weight in these fruits. The citric-acid production on an industrial level first resumed in the year 1890 based on the Italian citrus industry. It can either exist as anhydrous (water-free) or as a monohydrate. In the year 1893, C. Wehmer led to the discovery of Penicillium mold which could produce the acid from sugar.
Since the year 1919, the majority of the citric acid is produced from the black mold, scientifically named as Aspergillus Niger fungus. However, citric acid manufacturing did not become industrially significant until World War I disrupted the export of Italian citrus fruits.
