Processing Unit of Bael, Pine apple, Lychee Juices Bael (Aegle marmelos) is a fruit-bearing tree indigenous to dry forests on hills and plains of central and southern India, southern Nepal, Sri Lanka, Myanmar, Pakistan, Bangladesh, Nepal, Vietnam, Laos, Cambodia and Thailand. It is cultivated throughout India, as well as in Sri Lanka, northern Malay Peninsula, Java and in the Philippines. It is also popularly known as Bilva, Bilwa, Bel, Kuvalam, Koovalam, Madtoum, or Beli fruit, Bengal quince, stone apple, and wood apple. The tree, which is the only species in the genus Aegle, grows up to 18 meters tall and bears thorns and fragrant flowers. It has a woody-skinned, smooth fruit 5-15 cm in diameter. The skin of some forms of the fruit is so hard it must be cracked open with a hammer. It has numerous seeds, which are densely covered with fibrous hairs and are embedded in a thick, gluey, aromatic pulp. Pineapple contains a proteolytic enzyme bromelain, which digests food by breaking down protein. Pineapple juice can thus be used as a marinade and tenderizer for meat. The enzymes in pineapples can interfere with the preparation of some foods, such as jelly or other gelatin-based desserts. The Lychee (Litchi chinensis), also spelled Litchi (the U.S. FDA spelling) or Laichi and Lichu. The fruit is a drupe, 3–4 cm long and 3 cm in diameter. The outside is covered by a pink-red, roughly-textured rind that is inedible but easily removed. The inside consists of a layer of sweet, translucent white flesh, rich in vitamin C, with a texture somewhat similar to that of a grape. The rhizomes are considered useful in diarrhea and colic and are sometimes used medicinally. The export market is also quite favourable for all these products.
