What is a ginger powder project report?
A ginger powder project report is a detailed project report (DPR) for a unit that washes, peels, slices and dries fresh ginger, then grinds it into dry ginger powder (sonth). It sets out the process, machinery, raw material and drying ratio, market, project cost, means of finance, five-year projections, DSCR and break-even that a bank needs.
Entrepreneurs, farmer producer companies and spice processors use it to size the unit and apply for a loan or subsidy. Lenders use it to judge whether the unit can repay.
Also known as: dry ginger powder project report, sonth powder project report, ginger powder business plan, ginger processing unit DPR.
What a bank checks in a ginger powder project report
Ginger powder is a raw-material business with thin margins, so a lender reads every cost line in a project report on ginger powder. These are the values in our sample report and why each one gets questioned.
This share only holds if fresh ginger is bought at harvest prices. A banker will multiply your fresh ginger price by the drying ratio and compare it with your selling price.
Laminated retail pouches cost far more per kg than lined bulk bags. The packing line should match the mix of retail and bulk sales in your plan.
DSCR (debt service coverage ratio) is cash available divided by loan instalments. The sample averages 1.41, but the Year 2 dip is the year a lender looks at first.
Fresh ginger arrives in a few harvest months. The report must show how the dryer stays busy and how stored or bought dry ginger keeps the mill running after that.
Values are the assumptions in our illustrative sample. Your report uses figures for your capacity, sourcing area and buyers.
Ginger powder manufacturing plant cost in India
Cost depends on daily output and on the dryer, which is the biggest machine. For scale, the NIFTEM model DPR for PMFME puts a 120 MT a year unit at ₹36.10 lakh with ₹20 lakh of machinery. The large tier below is the unit in our sample report; the other two are indicative.
Small unit
₹25–60 lakh
About 200–400 kg of powder per day
- Machinery₹15–30 lakh
- Shed fit-out (or rent)₹5–15 lakh
- Working capital margin₹5–12 lakh
Fits PMEGP or PMFME, subject to limits
Mid-size unit
₹80–150 lakh
About 400–700 kg of powder per day
- Machinery₹45–80 lakh
- Land and building₹25–50 lakh
- Working capital margin₹10–20 lakh
MSME term loan, often with CGTMSE cover
Large unit
₹236 lakh
960 kg per day, 2,59,200 kg per year
- Plant and machinery₹117 lakh
- Land and building₹76 lakh
- Working capital margin₹16 lakh
Term loan ₹177 lakh (75%), promoter ₹59 lakh
Small and mid-size ranges are indicative and exclude land unless stated. Costs vary with dryer type, automation and location.
Ginger powder manufacturing process
Most of the work is drying: fresh ginger arrives with 80 to 82% moisture and leaves the dryer at about 10%. Slicing is what makes mechanical drying fast enough for a commercial unit.
- Washing and sorting
Rhizomes are washed in a drum washer to remove soil, and damaged or rotting fingers are picked out before they spoil a batch.
- Peeling
The skin is scraped off lightly; deep peeling cuts into the oil cells just under the skin and lowers aroma and volatile oil.
- Slicing
Peeled ginger is cut into thin, even slices. Sliced pieces dry in about 5 to 6 hours of hot air, against 16 to 18 hours for whole rhizomes.
- Drying
Slices are dried at about 60°C to around 10% moisture. Higher temperatures darken the powder, and sun drying takes 8 to 10 days.
- Grinding and sieving
Dry slices go through a pulveriser and a sifter; IS 1908 requires all of the ground ginger to pass a 500 micron sieve, and oversize is reground.
- Testing and packing
Each batch is checked for moisture and volatile oil, then packed in laminated pouches for retail or lined bags for bulk buyers.
Fresh ginger needed and the drying ratio
Dry yield is 19 to 25% of fresh weight, so you buy 4 to 5 kg of fresh ginger for every kg of powder. Fresh rhizomes keep for 60 to 90 days at 12 to 14°C and 85 to 90% humidity, which lets a unit buy at harvest and dry over the following months.
| Raw material | Share of cost | Year 3 (₹ lakh) |
|---|---|---|
| Fresh ginger | 85% | 218.25 |
| Dry ginger bought off-season | 15% | 38.52 |
| Total | 100% | 256.77 |
Yield and storage figures are from the NIFTEM model DPR. Sample costs are illustrative, at 70% capacity in Year 3.
Machinery for a ginger powder plant
The dryer takes the largest share of the machinery budget, so it decides both capacity and power cost. The pulveriser comes next; a cooled mill keeps the powder from heating up and losing aroma.
| Machine | What it does | Sample cost (₹ lakh) |
|---|---|---|
| Washing and peeling machine | Cleans rhizomes and scrapes the skin | 15.20 |
| Slicer | Cuts even slices for uniform drying | 9.35 |
| Hot air tray or belt dryer | Brings moisture down to about 10% | 44.41 |
| Pulveriser | Grinds dry slices to powder | 21.04 |
| Vibro sifter | Separates fine powder from oversize | 8.18 |
| Pouch filling and sealing machine | Weighs and seals retail packs | 12.86 |
| Moisture analyser and QC lab | Tests moisture and volatile oil per batch | 5.84 |
| Total plant and machinery | 116.88 | |
Costs are the sample report's estimates for a 960 kg per day line. Get current quotations before you finalise.
Who buys ginger powder and where to set up
Most ginger powder is sold in bulk to companies that use it as an ingredient: masala blends, ginger tea and kadha mixes, biscuits, pickles and ayurvedic formulations. Retail packs sell through kirana stores and online, but a new unit usually builds volume with bulk buyers first.
- Spice and masala brands
- Tea, kadha and health drink makers
- Bakery and confectionery units
- Ayurvedic and nutraceutical manufacturers
- Spice exporters
- Kirana stores and supermarkets
Location matters more than for most food products. Under PMFME, ginger is the One District One Product for several districts. Examples include Karbi Anglong in Assam, Bidar in Karnataka, Koraput in Odisha, Barwani in Madhya Pradesh and Sirmaur in Himachal Pradesh.
Where a new unit wins: buyers test volatile oil, colour and microbial load before they place repeat orders. A unit that dries fresh ginger within days of harvest, close to the farms, can meet those specs more reliably than one buying old dry ginger from traders.
Licences and quality standards for ginger powder
| FSSAI | Registration below ₹12 lakh turnover, state licence from ₹12 lakh to ₹20 crore, central licence above ₹20 crore. A unit the size of our sample needs a state licence. |
|---|---|
| Food standard | FSSAI regulations carry a compositional standard for ginger (sonth, adrak); the product must meet it to be sold as ginger powder |
| BIS specification | IS 1908:2008 for ground ginger: moisture 12% maximum, total ash 7% maximum, acid-insoluble ash 1% maximum, volatile oil 1.5% minimum |
| GST | Dry ginger and ginger powder fall under heading 0910 at 5% (2.5% CGST plus 2.5% SGST) under the September 2025 rate notification; fresh ginger is excluded from this entry |
| Export | Certificate of Registration as Exporter of Spices (CRES) from the Spices Board is mandatory for exporting spices |
| Business and site | Udyam and GST registration, consent to establish and operate from the State Pollution Control Board, and Legal Metrology compliance for retail packs |
Rules checked in October 2026. Licence thresholds and pollution categories vary by state, so confirm with the department before applying.
Loans and subsidy for a ginger powder unit
Ginger powder qualifies as micro food processing, which gives small units a scheme that most manufacturing products do not have.
PMFME
35% subsidy, up to ₹10 lakhCredit-linked capital subsidy for micro food units. You put in at least 10% of project cost and the bank lends the rest.
PMEGP
Manufacturing projects up to ₹50 lakhMargin-money subsidy of 15–35% of project cost for new units. Suits a small unit with one dryer.
MSME term loan with CGTMSE
Guarantee cover up to ₹10 croreCollateral-free cover for eligible micro and small units, used for mid-size and larger plants like our sample.
Scheme limits change. Confirm current terms with the bank or the scheme portal before applying.
Mistakes that weaken a ginger powder project report
- Costing fresh ginger as if it were powder
Each kg of powder needs 4 to 5 kg of fresh ginger. A report that skips the drying ratio understates raw material cost several times over.
- Using one ginger price for the whole year
Fresh ginger prices swing widely between seasons and years. The report should test how a higher purchase price changes profit and DSCR.
- Thirty days of stock in a seasonal business
If you buy most of the year's ginger at harvest, the working capital limit must cover that peak, not an average month.
- Planning sun drying for a food-grade product
Open drying takes 8 to 10 days and picks up dust, which raises ash and microbial counts that bulk buyers reject.
- Pricing bulk sales at retail pouch rates
Masala and tea brands buy at ex-factory bulk prices, well below the shelf price of a 100 g pack.

Ginger Powder project report: frequently asked questions
How much does it cost to start a ginger powder manufacturing unit?
A small unit making 200 to 400 kg of powder a day needs roughly ₹25–60 lakh, and a mid-size unit about ₹80–150 lakh. Our sample report models a 960 kg per day unit at ₹235.81 lakh, including land, building and working capital margin. These are indicative figures; your report works out the cost for your capacity, dryer type and location.
How much ginger powder do you get from 1 kg of fresh ginger?
Usually about 190 to 250 grams. Fresh ginger holds 80 to 82% moisture and is dried to about 10%, so the dry yield is 19 to 25% of fresh weight, as the NIFTEM model DPR notes. That means 4 to 5 kg of fresh ginger for each kg of powder, and the exact figure decides your raw material cost.
Which machines are needed for a ginger powder plant?
You need a drum washer and peeler, a slicer, a hot air tray or belt dryer, a pulveriser and a vibro sifter. A pouch filling and sealing machine and a moisture analyser complete the line. In our sample report the dryer is the largest single item at ₹44.41 lakh of the ₹116.88 lakh machinery cost.
Is ginger powder business profitable?
It can be, but margins are thin and depend on fresh ginger prices. Our illustrative sample earns a 14% return on investment in Year 3, breaks even at 52% of capacity and has an average DSCR of 1.41. Buying ginger at harvest, keeping drying losses low and selling on quality matter more than adding capacity.
Which licence is needed for ginger powder manufacturing?
An FSSAI licence is the main one. Units with turnover under ₹12 lakh take FSSAI registration, those between ₹12 lakh and ₹20 crore a state licence, and larger units a central licence. You also need Udyam and GST registration, pollution board consent, and a Spices Board CRES registration if you export.
Can I get a PMEGP or PMFME subsidy for a ginger powder unit?
Yes, if the project fits the scheme. PMEGP covers manufacturing projects up to ₹50 lakh with a margin-money subsidy of 15 to 35%. PMFME gives micro food units a 35% credit-linked capital subsidy, capped at ₹10 lakh. Both need a bank loan and a project report with projections and DSCR.
Ginger powder ka business kaise shuru kare?
Start by fixing where your fresh ginger will come from and at what harvest price, because that decides profit. Then choose capacity and dryer type, get an FSSAI licence and Udyam registration, and prepare a project report for the bank loan or subsidy. Many first units start small, selling bulk powder to masala and tea brands.
Is the ginger powder project report PDF free, and can I use it for a loan?
The sample is free to view and download. It is an illustrative report that shows the format and depth of an NPCS report. Its figures are representative and not based on a real project, so it should not be submitted to a bank. For a loan, NPCS prepares a report for your own capacity, location and loan scheme.
