What is a dehydrated onion project report?
A dehydrated onion project report is a detailed project report (DPR) for a unit that peels, slices and dries fresh onions into flakes, kibbled pieces, granules or powder. It sets out the process, belt dryer and other machinery, onion sourcing, market, project cost, means of finance, five-year projections, DSCR and break-even that a lender needs.
Entrepreneurs use a project report on dehydrated onion to size the plant and apply for a loan or subsidy; banks use it to judge repayment.
Also known as: onion dehydration plant project report, dehydrated onion flakes project report, dehydrated onion business plan, DPR for onion dehydration unit.
What a bank checks in a dehydrated onion project report
Credit officers look at a few numbers that show whether an onion dehydration unit can carry its loan through a seasonal year. These are the values in our sample report and why each one is tested.
Fresh onion makes up 90% of raw material cost. Onion prices swing sharply between seasons, so a bank expects a test of what a price spike does to profit.
Dehydrated onion picks up moisture fast, so it goes into lined cartons or laminated bags. Packing is a real cost here, not a rounding item.
Plants run hardest after the onion harvest and slow down when good raw onion is scarce. A report that assumes 330 days of steady output overstates sales.
The debt service coverage ratio, cash available for each rupee of loan repayment, dips to 1.65 in Year 2 of the sample, when full instalments start.
Values are the assumptions in our illustrative sample. Your report uses figures for your capacity, onion supply and buyers.
Dehydrated onion manufacturing plant cost in India
Cost depends mainly on dryer size and how much fresh onion the line can peel and slice each day. The third tier is the plant in our sample report; the first two are indicative ranges.
Small unit
₹40–90 lakh
About 200–500 kg of dry product per day, tray or single-belt dryer
- Machinery₹15–35 lakh
- Shed and fit-out (or rent)₹10–25 lakh
- Working capital margin₹5–15 lakh
May fit PMEGP or PMFME, subject to limits
Mid-size unit
₹1–1.8 crore
About 800–1,500 kg per day, one multi-stage belt dryer
- Machinery₹50–90 lakh
- Land and building₹35–60 lakh
- Working capital margin₹8–15 lakh
MSME term loan, often with CGTMSE cover
Larger unit
₹255 lakh
2,100 kg per day, 5,67,000 kg per year
- Plant and machinery₹121.93 lakh
- Land and building₹85.98 lakh
- Working capital margin₹16.48 lakh
Term loan ₹191 lakh (75%), promoter ₹64 lakh
Small and mid-size ranges are indicative and exclude land unless stated. Dryer make, heat source and location move the cost most.
Dehydrated onion manufacturing process
Fresh onion is close to 90% water, so the plant is built around removing it gently. Colour and pungency are lost if the slices are dried too hot or too slowly.
- Receiving and sorting
Onions are weighed, and sprouted, rotten or undersized bulbs are removed before they reach the line.
- Topping, tailing and peeling
Roots and necks are cut off and the dry outer skin is removed, usually with flame or compressed-air peelers.
- Washing and slicing
Peeled bulbs are washed in chlorinated water and cut into slices of even thickness so they dry at the same rate.
- Belt drying
Slices pass through a multi-stage belt dryer where air temperature is stepped down, bringing moisture below the 6% limit in IS 4452.
- Milling, sizing and sorting
Dry flakes are sieved, broken into kibbled, chopped, minced or granule grades, or milled to powder, and dark pieces are picked out.
- Metal detection and packing
Each lot passes a metal detector and is packed in lined cartons or bags to keep moisture out, with a sample kept for testing.
Which onions does a dehydration unit need?
Fresh onion is 90% of raw material cost in our sample report, ₹234.69 lakh in Year 3, with consumables making up the other 10%. Raw material as a whole is 44.1% of sales, so buying the right onion at the right price decides most of the margin.
ICAR-IIHR, the government horticulture institute, notes that white onions are preferred over red for better product and storage quality. It also finds open-market onion often low in dry matter and soluble solids. That is why many units contract farmers for specific white varieties.
- White varieties, which give a light, even colour that buyers grade on
- High dry matter, so fewer kilograms of fresh onion go into each kilogram of product
- Bulbs that are firm, cured and free of sprouting and neck rot
- Supply close to the plant, since fresh onion is heavy and bruises in transit
- Enough harvest-season buying to cover the months when good onion is scarce
Machinery for an onion dehydration plant
The dryer is the heart of the plant and its most expensive item: in our sample it is ₹51.21 lakh, 42% of plant and machinery.
| Machine | What it does | Sample cost (₹ lakh) |
|---|---|---|
| Onion peeler | Removes roots, necks and dry outer skin | 17.07 |
| Washer and slicer | Cleans peeled bulbs and cuts even slices | 17.07 |
| Multi stage belt dryer | Dries slices to below 6% moisture in stages | 51.21 |
| Grader and sorter | Sieves pieces into size grades and removes dark bits | 14.63 |
| Packing machine | Weighs and packs product in moisture-proof packs | 21.95 |
| Total plant and machinery | 121.93 | |
Sample estimates for a 2,100 kg per day line. Units making powder also need a pulveriser and sifter. Get current quotations before you finalise.
Market for dehydrated onion
Food makers buy dehydrated onion because it gives steady flavour all year, stores for months in a dry pack and saves the peeling, waste and storage losses of fresh bulbs. Most Indian capacity is around Mahuva in Gujarat's Bhavnagar district, and a large share of output is exported to Europe, North America and West Asia.
- Seasoning and spice blend manufacturers
- Instant noodle, soup and snack makers
- Ready meal, sauce and gravy manufacturers
- Food service and catering suppliers
- Importers and food ingredient traders abroad
What buyers test first: colour, moisture and microbial counts. A new unit wins repeat orders by passing these lot after lot, more than by price alone.
Licences and standards for a dehydrated onion unit
| Business registration | Udyam (MSME) registration and GST registration |
|---|---|
| FSSAI licence | State licence for general processing above 100 kg up to 2 MT per day; central licence above 2 MT per day and for all 100% export oriented units |

Mistakes that weaken a dehydrated onion project report
- Using one fixed onion price
Fresh onion prices can double between seasons. A report without a price sensitivity test looks safer than the business is.
- Assuming a low fresh-to-dry ratio
Open-market red onion with low solids needs more kilograms per kilogram of product than white contract onion. The ratio must match the onion you will actually buy.
- Pricing all output as export grade
Only part of each lot meets export colour and size specs. Lower grades sell for less and should be priced separately.
- Leaving out microbial control
Export buyers reject lots on microbial counts. Budget for hygienic design, a small lab and outside testing from the start.
- Not costing the dryer heat source
Briquettes, husk, diesel and LPG burners cost very differently to run. Get a fuel quote for the exact dryer before fixing utility costs.

Dehydrated Onion project report: frequently asked questions
What is the cost of a dehydrated onion plant in India?
A small tray or single-belt unit making 200–500 kg a day needs roughly ₹40–90 lakh, and a 800–1,500 kg a day unit about ₹1–1.8 crore. Our sample report models a 2,100 kg per day plant at ₹255 lakh including land, building and working capital margin. These are indicative ranges; your report prices your own capacity and site.
How many kg of fresh onion make 1 kg of dehydrated onion?
As a working rule, about 8–10 kg of fresh onion gives 1 kg of dehydrated onion. The exact ratio depends on the dry matter of the crop, peeling and trimming losses and the final moisture. White onions with high solids give the better end of the range, so a report should state the ratio it assumes.
Which onion is used for dehydration?
Dehydrators prefer white onion varieties because they give a lighter colour and better storage quality than red onion. Varieties with high dry matter and total soluble solids also need less water removed per kilogram of product. Many units grow onions under contract with nearby farmers to get the right variety at a fixed price.
Is the dehydrated onion business profitable?
In our illustrative sample, a 2,100 kg per day unit earns a 23% return on investment in Year 3. It breaks even at 42% of capacity and pays back in about 3.4 years. Real profit depends on fresh onion prices in the season, the fresh-to-dry ratio, dryer fuel cost and how much is sold as export grade.
Can I get a PMEGP or PMFME subsidy for an onion dehydration unit?
Possibly, if the project fits the scheme. PMEGP covers manufacturing projects up to ₹50 lakh with a 15–35% subsidy. PMFME gives micro food processing units a 35% credit-linked subsidy on eligible project cost, up to ₹10 lakh per unit. Larger plants usually take an MSME term loan. Confirm current terms with your bank first.
Dehydrated onion business kaise shuru kare?
Start by choosing your scale and product forms, flakes, kibbled, granules or powder, and line up a white onion supply near the plant. Then get a project report, arrange land and power, apply for Udyam, FSSAI and pollution consent, and approach a bank. Buyers usually test samples first, so plan trial lots before committing volumes.
Is the dehydrated onion project report PDF free, and can I use it for a loan?
The sample PDF is free to view and download. It is an illustrative report that shows the format and depth of an NPCS report. Its figures are representative and not based on a real project, so it should not be submitted to a bank. For a loan, NPCS prepares a report for your own capacity, location and scheme.
