Introduction
Onion is one of major bulb crop grown in India which presently attracting attention of all persons due to rise in prices. Both immature and mature bulbs are used as vegetable and condiment. The onion, also known as the bulb onion or common onion, is used as a vegetable and is the most widely cultivated species of the genus Allium. Consumption of onions may prevent gastric ulcers by scavenging free radicals and by preventing growth of the ulcer-forming microorganism, Heliobacter pylori. Onions are cultivated and used around the world. As a foodstuff they are usually served cooked, as a vegetable or part of a prepared savoury dish, but can also be eaten raw or used to make pickles or chutneys. Our main export products are Dehydrated Red and White Onions in various forms like slices, flakes, kibbled, chopped, minced, granules and powder.
Dehydrated Onion
The onions are perishable commodity and cannot be stored for a long time after harvest in an ordinary conditions. Dehydration is simply, effective and economical for preserving the onions during seasons of abundance and using them during off seasons. Dehydrated Onions have been produced in small quantities since the nineteenth century. A 100 percent export oriented unit is one, which would export its entire production, except for the permitted levels of rejects. Onion is mainly exported in the form of dehydrated onion, canned onion and onion pickle. When establishing a dehydration industry, considerable thought should be given to the procurement of fresh onions for dehydration. To operate a dehydration plant efficiently, a constant supply of onions is required and this involves considerable organization. Ideally a dehydration factory should handle only one type of onion over long periods, so as to avoid the necessity of cleaning down all the machinery and altering the grading and cutting settings etc. when changing from one variety to another.
Advantages:-

· They are cheap to pack compared with canned goods.
· They do not require refrigerated storage as do frozen onions.
· Dehydrated onions will make your meals easy and delicious.
· Dried onions can be used just like fresh onions. Easily reconstituted either by adding them to dishes with lots of cooking liquid like soup, stew, chili, etc.
All onions for processing are grown from specific varieties best suited for dehydration. Specific strains of the Creole Onion, Southport Globe Onion, and the Hybrid Southport Globe were developed by the dehydration industry. They are white in color and process a higher solid content which yields a more flavorful and pungent onion.
Onion dehydration using a continuous conveyor dryer involves the following basic steps:
a) Harvesting,
b) Transporting To The Plant,
c) Curing,
d) Washing,
e) Slicing,
f) Dehydration In Three To Four stages,
g) Milling, and
h) Packaging
