Fried banana wafers are prepared by peeling and slicing fully matured but unripe bananas and deep-fat frying the slices in suitable edible oil or fat, or combinations thereof. The bananas are sliced breadth wise to give thin circles that are dropped straight into the frying medium held at proper temperature for a time to render them crisp. Salt and other seasonings are added after frying. When coconut oil is used, antioxidants are not found useful.
