Fruits and Vegetables Value addition, Food Processing, Dehydration, Canning and Preservation, Processed Food Projects

In developing countries agriculture is the mainstay of the economy. As such, it should be no surprise that agricultural industries and related activities can account for a considerable proportion of their output. Of the various types of activities that can be termed as agriculturally based, fruit and vegetable processing are among the most important. Therefore, fruit and vegetable processing has been engaging the attention of planners and policy makers as it can contribute to the economic development of rural population. The utilization of resources both material and human is one of the ways of improving the economic status of family.

The change in the income growth, increase in population, lifestyle and concern towards health and nutrition worldwide have resulted in a large demand for processed fruit and vegetable products all over the globe. India is among the topmost vegetable and fruit producer in the worldand accounts for about 15% of the world's production of vegetables. A large number of units are in the cottage/home scale and small scale sector, having small capacities upto 250 tonnes/annum though big Indian and multinational companies have capacities in the range of 30 tonnes per hour or so. It has the distinction of producing almost all-tropical and exotic fruits and vegetables because of varied climatic conditions. India’s food processing sector covers fruit and vegetables. Value addition to food products has assumed vital importance in our country due to diversity in socio-economic conditions, industrial growth, urbanization and globalization. Value is added by changing their form, colour and other such methods to increase the shelf life of perishables.

There are various methods of preservation of food including thermal processing, fermentation, pickling, dehydration, freezing etc. The technology for preservation also varies with type of products and targeted market. Some of fast growing segments of food processing industries are given as under:

• Mango and other fruit pulps

• Pickles, chutney, sauces etc.

• Tomato products like paste, puree and ketchup

• Fruit jam, marmalade, crush, squashes, juices etc.

• Canned fruits and vegetables etc.

• Frozen products like frozen peas, cauliflower etc.

India has made a good progress on the horticultural map of the world.Boosted by rising consumer demand owing to better health awareness and purchasing power, production of fruits and vegetables across India has increased this year with their total yield surpassing the production of food grains. Fruit & vegetable processing is driven by growing consumer demand for healthy and fresh products that are easily available and require minimal preparation time. Processing of fruits & vegetables increases their shelf-life. Since they are traded on a large scale, processing ensures that market demand of fruits & vegetables with standard quality is met. The vast production base offers India tremendous opportunities for export. India's exports of Processed Food was Rs. 26,067.64 Crores in 2015-16, which includes the share of products like Mango Pulp (Rs. 796.17Crores), Dried and Preserved Vegetable (Rs. 914.21 Crores), Other Processed Fruit and Vegetable (Rs. 2,900.33 Crores), Pulses (Rs. 1,603.22 Crores), Groundnuts (Rs. 4,046.05 Crores), Guargum (Rs. 3,233.87 Crores). The Indian food –processing industry is primarily export oriented. India’s geographical situation gives it the unique advantage of connectivity to Europe, the Middle East, Japan, Singapore, Thiland, Malaysia and Korea.

Fruit and vegetable processing industry has taken a new direction and is growing gradually with strong growth rate annually. Infrastructure development for processing may take this industry to the new heights in the years to come with the help of sufficient exports and investments. Fruit and vegetable processing is done widely in the food and beverage industry.Fruits and vegetables are processed into a variety of products such as juices and concentrates, pulp, canned and dehydrated products, jams and jellies, pickles and chutneys etc. The extent of processing of fruits and vegetables varies from one country to another.

Dehydrated Onion

Onion is one of the most important commercial vegetable crops grown in India. Both immature and mature bulbs are used as vegetable and condiment. It contains vitamin B and a trace of vitamin C and also traces of iron and calcium. The outstanding characteristic of onion is its pungency, which is due to a volatile oil known as allyl-propyl disulphide. Onions compared with other fresh vegetable are relatively high in food energy, intermediate in protein content and rich in calcium and riboflavin. In the food processing field, dehydration is sometimes described as the removal of 85% or more of water from a food substance, by exposure to thermal energy by various means. Thermal dehydration reduces volume of the product, increases shelf-life, and lowers transportation cost. There is no clearly defined line of demarcation between drying and dehydrating, and latter sometimes being considered as a supplement of drying. Usually, the direct use of solar energy, as in the drying of raisin, layette is not lumped with dehydrating. The term dehydration also is not generally applied to situations where there is a loss of water as the result of evaporation. Dehydrated onions are used chiefly as a constituent in various food products i.e. they are sold to manufacturing concerns as an industrial raw material and demand for dehydrated onions is a function of the demand of these food products. However there is a demand for dehydrated onions for use as culinary onions, both by large catering concerns - institutions and industrial canteens; and for domestic use. The other use of dehydrated onions is in the manufacture of dried soups-once virtually the sole outlet for these products, but now declining in relative importance, as other applications including use in canned soups and stews, baby foods, fish, meat and bakery products and more recently in dried `ready-meals' have been developed. So far as possible both merchants and users were consulted in due course. Since there are relatively few dried soup manufacturers, it was possible to contact a majority of the users in this class. Retail outlets obtain supplies largely from food manufacturers. The different market sectors account for varying proportions of demand for dehydrated onions. Dehydrated onion slices and pieces are sold to all four market sectors. The global market for dehydrated onions registered the revenue worth US$ 950 Mn in 2017, which is likely to reach in excess of US$ 1,500 Mn by the end of 2028.Future Market Insights expects the dehydrated onions market to observe stable growth at a promising CAGR of 4.8% over the 10-year assessment period, 2018-2028. India had exported about 50,000 tonnes in 2016 and the industry is expecting to export about 35,000-40,000 tonnes. India is offering dehydrated onions at $1,650 per tonne while China and Egypt offer it in $2,000 a tonne. On the other hand, the country is having about 20,000 tonnes of dehydrated onion carry-forward stock unsold with the producers. Exports begin in January every year and by June end, the country exports almost 85-90 per cent. In India dehydration of many food products especially vegetables and some fruits are in practices at home and industry level throughout year. Thus, due to demand it is best to invest in this project. Banana is the common name for a type of fruit and also the herbaceous plants of the genus Musa. Banana is amongst the most versatile and most widely eaten fruits in the world today. Bananas come in a variety of sizes and colors when ripe, including yellow, purple, and red. Bananas can be eaten raw though some varieties are generally cooked first. Banana fruit is economically one of the most important fruit produced and consumed in the world. In some parts of the world, banana is called plantain. The soft and sweet fruit of this tropical plant is enjoyed by people from around the world. Fully ripe banana pulp contained 33.6% reducing sugars, 53.2% sucrose, 5.52% protein, 0.68% fat, 0.30% fiber, 2.58% starch and 4.09% ash. Banana has various uses that can be turned into many processed products. In addition to banana exporting, processing banana into different products could mean additional income for banana farmers. Banana powder is a powder made from processed bananas. Banana powder is formed by using banana pulp, which is chopped and then processed with hydraulic shear using a colloid mill, turning it into a paste. The paste is then dried by either spray or drum-drying. Good quality pulp with proper drying produces good quality powder. Spoilage due to microbial and enzyme activity is greatly reduced at the moisture level of 7.0% but caking is easily developed in banana powder during storage if improper packaging materials are used for the purpose due to its high sugar content. Banana powder is a powder made from processed bananas. It is used as a component for production of milk shakes and baby foods. It is also used in the manufacture of various types of cakes and biscuits. Banana powder has been studied to prevent ulcer formation induced by a variety of drugs, including aspirin, indomethacin, phenyl-butanone, Prednisolone, cyst amine and histamine. Banana powder treatment not only strengthens mucosal resistance against ulcer gens but also promotes healing by inducing cellular proliferation. Banana powder also used as natural super disintegrating agent and natural flavoring agent, the banana powder had more disintegration property when compared to synthetic super disintegrates. Banana powder is used as binder in the animal feeds and used additive. Banana powder is also a major source of carbohydrate and calories which makes it more ideal component for infant formula. In terms of value, the global banana powder market is expected to reach a market value of US$ 774.4 Mn by the end of 2027, with an anticipated CAGR of 3.9% over the forecast period. The drivers for the growth of the banana powder market include rising demand for anti-diarrheal in pharmaceutical, rise in production of bakery products using banana powder, increase in use of banana powder for baby food, banana powder is an alternative for gluten free products. FREEZE DRIED FRUITS & VEGETABLES (Dry Banana, Mango, Custurd Apple, Beetroot, Sapota, Dragon Fruit, Jamun and Green Peas)

Freeze-drying, technically known as Lyophilization, is a process of sublimation where water molecules in a solid phase are directly converted to vapor phase. Since Lyophilization is the most complex and expensive form of dehydration, its use is usually restricted to delicate and heat-sensitive high value materials. Freeze drying is a relatively recent method of preserving food. It involves freezing the food, then removing almost all the moisture in a vacuum chamber, and finally sealing the food in an airtight container. Freeze dried foods can be easily transported at normal temperatures, stored for a long period of time, and consumed with a minimum of preparation. Once prepared, freeze-dried foods have much the same look and taste as the original natural products. Freeze-dried food has many advantages. Because as much as 98% of the water content has been removed, the food is extremely lightweight, which significantly reduces the cost of shipping. This also makes it popular with boaters and hikers who have to carry their food with them. Because it requires no refrigeration, shipping and storage costs are even further reduced. Global Freeze Dried Fruits and Vegetables Market is expected to surpass USD 60 billion by 2025. Increasing popularity of packaged food will be a major factor behind the freeze dried fruits and vegetables market growth. The product is extensively used in preparing many packaged food items such as soups, juices, ready-to-eat meals, etc. The advantages of the product over fresh fruits and vegetables will augment the industry growth in the forecast years. Freeze drying is considered as the best drying process for packaging food and beverage products as it maintains the structural integrity and preserves the flavor. Freeze dried fruits & vegetables have better aroma, rehydration, and bioactivity when compared to products dried using other alternative techniques. Other advantages include better shelf-life, higher amount of retention of nutrients, color & texture and easy rehydration capability. A Business Plan for FREEZE DRIED FRUIT & VEGETABLES (Dry Banana, Mango, Custard Apple, Beetroot, Sapota, Dragon Fruit, Jamun and Green Peas)

The sublimation step of freeze-drying, also known as lyophilization, transforms water molecules in a solid phase into vapour molecules right away. Since lyophilization is the most complex and expensive kind of dehydration, it is normally only employed with expensive, delicate, and heat-sensitive materials. Freeze drying is a relatively recent method of food preservation. The food must first be frozen before being practically completely dried out in a vacuum chamber and sealed in an airtight container. Foods that have been freeze-dried require little preparation to eat, are easy to carry at room temperature, and can be stored for a very long period. Food that has been freeze-dried after processing resembles natural items in both appearance and flavour a great deal. Food that has been freeze-dried has many advantages. Because up to 98 percent of the water content has been removed, the meal is exceptionally light, which minimises the shipping cost. This makes it a favourite with boaters and hikers because they must bring food. It doesn't need to be refrigerated, thus storage and shipping costs are much lower. Application of Freeze Dried Vegetables Freeze-dried vegetables can be used in a variety of dishes, such as pasta dishes, vegetable dips and sauces, quick soups, appetisers, and salad dressings. Using vegetable purees made from freeze-dried vegetables in dishes doesn't degrade their quality and they have a superb flavour. Additionally, freeze-dried vegetable powders can be used in a variety of dishes. Application of Freeze Dried Fruits Freeze-dried fruits are frequently used in breakfast cereals, sweets, bakery mixes, ice cream, snack mixes, pastries, and many more goods. Fruit purees that have been frozen-dried are also a typical flavouring component in mixes. Advantages of freeze-drying To benefit from these specific advantages, use freeze-dried materials in your subsequent application. 1. Whole Food Nutrition As a result of shifting consumer values, more people are looking for nutrition from real, high-quality food sources with transparent labelling. Because they are very little processed, freeze-dried foods can contain pure ingredients that are free of synthetic, artificial, and highly processed materials. 2. Closest to the Fresh Form The fact that freeze-drying retains nutritional content more effectively than other drying methods adds credence to the consumer preference for nutrition from whole foods. The process also keeps the colour and shape of the original raw materials, assuring consumers that the fruits and vegetables they are eating are in fact real. 3. Customization Another advantage is the ability to customise freeze-drying to meet particular requirements and project goals. Freeze-dried products can be sliced or ground into a wide range of sizes and forms, from whole fruits and vegetables to fine powders. You may easily add the completed product into any blend or composition to produce a flavour profile that is uniquely yours. 4. Application Variety The adaptability and blending capabilities of food processors enable the addition of actual fruits and vegetables to a variety of applications. Expanding categories of freeze-dried application include breakfast applications like hot and cold cereals, retail-ready or ready-to-eat snacks, and beverage applications like smoothies or whole fruit pieces added to beverages. 5. Prolonged Shelf Life The amount of moisture in any given product directly affects how long it will stay fresh. Bacterial growth is stopped by employing the freeze-drying process to eliminate water. Although each product's moisture content is different, freeze-dried goods typically have a moisture level of about 3%. Indian Market In India, market categories for technology, size of operation, and accessories and equipment are used. Based on accessories and equipment, the market is segmented into vacuum systems, loading and unloading, controlling and monitoring systems, manifolds, clean in place systems, drying chambers, and others. India's freeze-drying market is anticipated to grow at a CAGR of 8.6% during the forecast period. Due to the acceptance of modern lifestyles and a lack of work-life balance, the demand for quick-to-prepare dishes has surged throughout the nation. Food that has been professionally prepared to simplify consumption is referred to as tertiary processed food, also known as convenience food. Global Market Asia Pacific is a significant region for growth in the market for freeze-dried fruits and vegetables. Due to factors including a sizable population, increasing disposable income, and the penetration of different retail formats, the Asia Pacific market is anticipated to create more than USD 15 billion in sales by the end of the projected years. The market for freeze-dried fruits and vegetables is expected to surpass USD 60 billion by 2025. The market for freeze-dried fruits and vegetables will grow significantly as packaged meals become more and more popular. Soups, beverages, ready-to-eat meals, and other packaged foods, among others, frequently contain the component. The advantages of the product over fresh fruits and vegetables will spur industry growth in the coming years.
