Citric acid is a weak organic tricarboxylic acid having the chemical formula C6H8O7. It occurs naturally in citrus fruits. In biochemistry, it is an intermediate in the citric acid cycle, which occurs in the metabolism of all aerobic organisms. A citrate is a derivative of citric acid; that is, the salts, esters, and the polyatomic anion found in solution. Citric acid exists in greater than trace amounts in a variety of fruits and vegetables, most notably citrus fruits. Citric acid exists in a variety of fruits and vegetables, but it is most concentrated in lemons and limes, where it can comprise as much as 8 percent of the dry weight of the fruit. Citric acid is a common food additive and is found in everything from sodas to candies.

Uses and Applications

Approximately 50% of the world’s citric acid production is used as a flavor enhancer in beverages. Citric acid is used in soft drinks, teas, juices, and other beverages to create a slightly tart, refreshing flavor and balance sweetness. Because citric acid can be made in a powder form, it can be used in dry foods when a sour flavor is desired. Citric acid is therefore a dry alternative to lemon juice or vinegar in dry foods such as seasoning salts, flavoring powders, and crunchy snacks. Many by-products and residues of the agro-industry can be used in the production of citric acid. A cost reduction in citric acid production can be achieved by using less expensive substrates.

The citric acid market is directly influenced by the growth of food additives in the processed food industry. Consumer interest in food & beverage products prepared from safe ingredients is projected to remain strong during the forecast years. On the basis of applications, citric acid market is segmented into food, beverages, pharmaceutical, personal care, metal cleaning and others. Further, on the basis of product types, food segment is sub-segmented into bakery and confectionaries, frozen foods, dairy products and others. Personal care segment is sub-segmented into detergent & toiletries. In pharmaceutical citric acid used in the form of salt or liquid to produce medicine tablets and in personal care products as solvent is an antimicrobial pesticide that is used as a disinfectant, sanitizer, germicide and virucide.

About three-quarters of the world consumption of citric acid is in beverages and food, primarily as an acidulant; carbonated soft drinks account for most use. Citric acid is used to control the growth of microorganisms, adjust acidity (pH), provide sourness and tartness, and enhance flavors. As an acidulant, citric acid competes with phosphoric, tartaric, DL-malic, fumaric, and lactic acids.

Global production has now reached 1.4 million tonnes and there is annual growth of 3.5–4.0 % in demand/consumption of citric acid. Any increase in citric acid productivity would be of potential interest and hence there is an obvious need to consider all possible ways in which this might be achieved. The global market for citric acid stood at USD 2.6 Billion in 2014, at USD 3.6 Billion by 2020 and is projected to grow at a CAGR of 5.5% from 2015 to 2020.
