Water cannot penetrate crystalline cellulose but dry amorphous cellulose absorbs water becoming soft and flexible. Some of this water is non freezing but most is simply trapped. CMC acts as thickener rheology modifier, water retention aid filtration reducer binder dispersant protective colloid floating aid crystallization inhibitor ions exchanger etc. CMC in the oil-drilling industry as an ingredient of drilling mud, where it acts as a viscosity modifier and water retention agent.
