Food Processing

Food Processing could be defined as the process of transforming of food items into usable forms. It might include the processing of raw material through various chemical and physical process into food. Different activities involved in this process include cooking, mincing, liquefaction, canning, pickling, emulsification, and macerating.

Objectives of Food Processing

Food Technology is one of the known vast domains. It deals with the production process to make food. Food processing is done to achieve certain goals like the ones stated below:

·        To boost the shelf life of food articles.

·        To prevent contamination of food.

·        For transport and food storage.

·        To turn food products into the ones that appeal to customers.

·        It holds the potential of reducing enormous wastage of agricultural produce in the absence of processing technologies and cold chain facility

·        It is labour-intensive industry, which has the potential to employ 13 million people directly and 35 million people indirectly

·        This will also lead to increase in farm income, generate employment opportunities, foster forward and backward linkage effects, contribute to exports and integrate Indian economy with the rest of world.

Beverages

Any liquid that can quench the thirst are called beverage. Beverage is any kind of liquid.

We are always taking water, Water is a beverage item. Water, tea, coffee, milk, juice, beer and any kind of drinks item are listed in beverage items. Actually, beverage means any kind of Liquid item.

In the F&B section beverage is a most important matter because without beverage any kind of restaurant and F&B section fully value less.

Beverage can be hot and cold or an alcohol item and the beverage can be used for everything that you can drink but sometimes it’s define gone to style of drinks like soft drinks.

Classification of Beverages

Non-Alcoholic Beverages: Non-alcoholic beverages refers to non-intoxication drinks or sweet carbonated drinks, which doesn’t have any liquor percentage or in other words yeast is not introduced to convert sugar into alcohol during the fermentation process.

Soft drinks comes in different variety like chilled, hot, bottled, canned or open liquids. The bottles or cans drinks are hygienically packed, e.g. aerated waters, mineral water, juices, squashes, syrups, smoothies, shakes etc. to be consumed as and when required.

Alcoholic Beverages: These are portable liquid which contain 1% to 75% of liquor. They are produced by the introduction of yeast for fermentation into substance such as Grapes, Grains, Barley, Fruits, Sugarcane and Rice.

Some examples of Alcoholic beverages are Wine, Champagne, Beer, Whiskey, Brandy, Aperitif, Degestive, Liqueur, Spirits, Sake, Rice Wine and Cocktails.

Market Outlook

India is expected to become the fifth largest consumer market in the world by 2025.

The food processing industry in India has a total turnover of around USD 65 billion which includes value added products of around USD 20.6 billion.

The Indian food processing industry accounts for 32% of the country’s total food market. Estimated to be worth USD 121 billion, it is one of the largest industries in India, and is ranked fifth in terms of production, consumption and exports. The industry employs 13 million people directly and 35 million people indirectly. It accounts for 14% of manufacturing GDP, nearly 13% of India’s exports and 6% of total industrial investment. Currently growing at more than 10% per annum, it is expected to touch USD 194 billion by 2015.

India’s food and beverages (F&B) industry will expand at an average annual pace of 24% to reach Rs.3.8 trillion in sales by the year ending 31 March 2017.

Indians spend about half of their total consumption expenditure on food.

The beverage industry, excluding alcoholic beverages, is worth about $16 billion.

The beverage industry in India constitutes of around USD 230 million among the USD 65 billion food processing industry.

The non-alcoholic beverage industry in India stood at US$2.5 billion in 2015.  The market is estimated to grow at a CAGR of over 17% in between the period from 2016 to 2020 to reach US$4.9 billion by 2020.

Liquid Food and beverage processing in India has been a rising star in recent years. More and more is being consumed, and the quality of the products is ever higher. India is widely recognized as a promising market for the liquid food and beverage industry.

The beverages category contributes 8-9 per cent to the total FG market in India. With the entry of major international beverage players over the last few decades, the market has evolved and has made way for many products, which have found an immediate connect with Indian consumers. The emergence of various brands in all segments has given an unprecedented thrust to the category over the last couple of years. Consumers can choose beverages of almost all flavours, colours, ingredients, health and nutritional values.
